As I'm approaching 5k followers I wanted to take this time to thank each and every one of you for the continued loyalty and support you have shown me since I started my instagram journey to inspire other diabetics through recreating food and to ultimately live a healthier lifestyle. I am a Fil-Am (Filipino/American) who recreates healthy versions of childhood inspired Filipino favorites and more.
I have been battling with diabetes for 11 years & has fought numerous battles with the disease & the last 2 years being the worst. I decided to put my main focus on my health & I cut my work hours tremendously. Always feeling sick & being at home, I decided to create an Instagram account to share my diabetic journey & inspire others through food.
Diabetes runs in my family & affects many others worldwide. After witnessing my grandma fight through it & passing at a young age, it scared me. After being diagnosed, I knew I had to take action to prevent my diabetes from worsening.
Through 10+ years of trying to lower my sugar levels it has been the most stressful & frustrating experience. I tried everything you could think of, from exercise coach, health coach, food adjustments, numerous medications, dealing with side effects, multiple testings, vitamins, naturopath, suggestions from family & friends, yet my sugars were as stubborn as can be.
Now 11 years later, I finally found the right insulin & medication that is actively working to control my sugar levels. I continue to monitor it closely by meeting with my primary care physician, a diabetic coach, and an endocrinologist.
Although there is no cure for diabetes, it can go into remission. I have been managing my diabetes with medication & lifestyle changes. Through this all I have learned that health comes first. It has brought me to where I am today. Sharing my knowledge through food, recreating food, recreating simple Filipino low carb dishes, inspiring others with diabetes, and to ultimately live a healthier lifestyle.
Along with recreating recipes, using alternative ingredients, and seasonings, my life couldn’t be more enjoyable. Remember, food & life is meant to be enjoyed. So eat healthy, indulge, & eat what you want, in moderation.
